I feel in love with the Jalapeno, Artichoke, and Cheese dip that COSTCO sells. However, it is not always convenient to go to COSTCO, fight the crowds, stand in the check out line, etc. A co-worker shared this great recipe with me. It is delicious and easy to make. Not as hot/spicy as the COSTCO version but you could substitute jalapenos for the green chilies and come up with a close comparision. ENJOY!
Artichoke Dip Recipe:
2 cans artichoke hearts (drained & diced)
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
1/2 cup shredded parmesan cheese
1 – 8 ounce cream cheese (softened)
1 cup of mayo
Dash of garlic powder
1 small can diced green chilies
Mix together all ingredients and bake at 350 degrees for 15 minutes or until bubbly. Stir dip to make sure cheeses have all melted.
